A Culinary Journey Through Europe: Fresh Inspiration for Hosting Austin
This summer, I had the incredible opportunity to travel across Europe, with stops in Copenhagen, London, San Sebastián, Barcelona, Nice, and Paris. For me, this was more than just a trip, it was a pilgrimage. As a chef, I’ve long admired many of the culinary minds shaping modern cuisine, following their work through books, interviews, and menus. To sit at their tables, taste their food, and experience their philosophy firsthand was a dream come true.
We visited some of the world’s most celebrated restaurants: Noma, Enigma, KOL, Saint John, Kiln, Bao, Elkano, Teatro, Septime, Clamato, Astrance, L’Ami Jean, Lavomatic, Aux Deux Amis, Oobatz, Narú, Pure & V, and more. Each kitchen told a story of its city, its season, and its chef’s vision. Some dishes were bold and unexpected, others delicate and deeply comforting, but every one carried a spark of artistry that reminded me why I love this craft.
What stood out most wasn’t just the technique or the ingredients, it was the way these chefs expressed themselves on the plate. Noma’s precision, Elkano’s mastery of simplicity, Enigma’s sense of theater, KOL’s celebration of heritage flavors, and Septime’s effortless elegance all left a lasting mark on me. These experiences deepened my belief that food is not just about feeding, it is about creating connection, memory, and wonder.
I came home not just full, but inspired. Inspired to refine, to experiment, and to bring back that same sense of storytelling and detail to my own work here in Austin. Hosting Austin has always been about more than cooking, it is about crafting experiences for our guests. After this journey, I feel more ready than ever to create meals that surprise, delight, and leave lasting impressions.
